A Healthier Doughnut



Sugar-Free, Gluten Free Baked Blueberry Donuts

Ingredients

  • 1 1/4 cups almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 2 tablespoons sugar free maple syrup 
  • 1/4 cup oil of your choice, melted
  • 1/3 cup blueberries

Directions

Preheat the oven to 350 degrees F.
Dump the almond flour, salt, and baking soda into the blender.
Whisk together the eggs and syrup and add to the blender.
Pour in the oil.
Blend until smooth.
Fold in blueberries.
Pour into greased doughnut pan (or muffin tins) and bake for 10 minutes. Makes 6-8 donuts.

Sugar-Free Frosting

Ingredients 

  • 1 (1.4 ounce) package sugar-free vanilla instant pudding mix
  • 1 3/4 cups milk
  • 1 (8 ounce) package cream cheese
  • 1 (8 ounce) container lite frozen whipped topping, thawed

Directions

In a medium bowl, combine pudding mix and milk. 
Mix well and let stand until thickened. 
In a large bowl, beat cream cheese until smooth. 
Add pudding and mix well. 
Finally, fold in whipped topping.
